Ingredients:
¾ teaspoon of baking soda
¾ teaspoon of baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 cup almond flour
¼ cup coconut flour
2 large eggs
2 very ripe bananas, mashed
2 Tablespoons olive oil
¼ cup maple syrup
2 teaspoons vanilla extract
For added deliciousness, add 1 cup of berries or roasted
walnuts. In the picture above, I added a mixture of raspberries, blueberries,
blackberries and walnuts and it was amazing!!
Directions:
1. Preheat
oven to 350 degrees and either line your loaf pan with parchment or use cooking
spray.
2. In a large
bowl, mix the eggs, bananas, olive oil, maple syrup and vanilla until combined.
3. In a
smaller bowl, mix the baking soda, baking powder, salt, cinnamon and flours
adding to the larger bowl and gently mixing.
4. Pour
batter into prepared pan and bake 45-55 minutes or until it passes the
toothpick test.
Remove from oven, cool, slice and serve.
