Gluten-Free Apple Cake (Made with Almond Flour)

This cake is sweet and moist. It's delicious in the morning, smothered with butter. Or in the evening, toasted under the broiler with a dollop of ice cream. No, two dollops.

Ingredients:
2 apples, skinned, cored and chopped
2 cups almond flour
2 cups brown sugar
½  tsp salt
1 ½ tsp baking soda
1 cup olive oil
2 eggs
2 tsp vanilla
¼ cup chopped roasted almonds, roughly chopped
2 Tbs butter

Preheat oven to 325 degrees. Butter your baking dish.

1. In a large bowl mix together flour, sugar, salt and baking soda.
2. In a second bowl whisk together the oil, eggs and vanilla. Add the apples.

3. Add the egg mixture to the flour mixture, by hand. Be careful the apples don't bunch.

4. Heap the dough into your pan, even with a spatula, sprinkle with almonds, dot with butter.
5. Cook 1 hour.

6. Let the cake cool ~ 30 minutes.

7. Plate.

8. Enjoy!

  2. Isn't it lovely!! My sister made it for me!! But you should try the cake. It is so quick to make. It falls apart a bit, but you'll be eating too fast to notice!!

  4. I did mean to say olive oil. Trust me, the taste is so much richer, deeper. Any other oil just doesn't compare!!
