Fruit & Nut Paleo Banana Bread


If you're worried your transition to Paleo won't be a tasty one, start with this recipe, it delicious!

Ingredients:
¾ teaspoon of baking soda
¾ teaspoon of baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 cup almond flour
¼ cup coconut flour
2 large eggs
2 very ripe bananas, mashed
2 Tablespoons olive oil
¼ cup maple syrup
2 teaspoons vanilla extract
For added deliciousness, add 1 cup of berries or roasted walnuts. In the picture above, I added a mixture of raspberries, blueberries, blackberries and walnuts and it was amazing!!

Directions:
1. Preheat oven to 350 degrees and either line your loaf pan with parchment or use cooking spray.
2. In a large bowl, mix the eggs, bananas, olive oil, maple syrup and vanilla until combined.
3. In a smaller bowl, mix the baking soda, baking powder, salt, cinnamon and flours adding to the larger bowl and gently mixing.
4. Pour batter into prepared pan and bake 45-55 minutes or until it passes the toothpick test.

Remove from oven, cool, slice and serve.

It won't look like much, before it's cooked, but don't despair.

  3. This bread is fabulous, although I cooked it a little long the first time. Making it again this weekend to perfect the timing. It was a huge hit in my house!

  4. Thanks for stopping by Erica!! So glad you liked it! I make it every Monday. It's usually gone by Wed, Thurs at the latest. But by Monday, I'm craving it again. I'm working on another variation and hope to post soon.
